Prince Dining Room — Melbourne, Australia

One of Melbourne’s most endearing calling cards is its haul of world-class restaurants. To this, we can now add the freshly minted dining room at the Prince Hotel, which debuted last year.

Dressed lightly in white with flashes of green and black steel, and customised furniture, the restaurant’s modernist interiors by Melbourne-based Iva Foschia of IF Architecture dovetail nicely with Meme Design’s original work on the rest of the hotel. Which is to say that the mood in the mezzanine floor bolthole is spare and bright with natural light, a suitably stylish pairing for executive chef Dan Hawkins’ Mediterranean menu.

Here seasonal and locally sourced produce are treated simply. Heritage carrots are roasted in a wood-oven and spiked with spiced za’atar seeds and a carrot-top harissa, whilst fork-tender cuts of Flinders Island lamb shoulders are gently braised with sticky plum prunes and sesame, and served with minty tabbouleh and smoked yoghurt. §
